I conclude my final week is Spain by exploring the food of the Southernmost regions, namely Valencia, Andalucia and Murcia. Not only are we back seaside and reap all the benefits that come along with that, but the area also starts to gain some Moorish influence. Home of the almighty olive, and famous for its paella and gazpacho, this area boasts some of the healthiest cuisine in the world. The Mediterranean diet? Yup, comes from here.
