Deep Breath: Ahhhh-vocado Pudding, or Pudim d’Avocat

Ok, I have to be honest, I only saw this recipe on one site, so I can’t really give you a thorough account of where this really came from, or why they eat this in Western Africa.  All I learned that Mauritania’s history as a French territory adopted some French influence into its cuisine including, in this instance, Pudim d’Avocat, or avocado pudding.  And all I can say is try it, and I think you’ll be delighted.

Why did I pick this? To be honest, I’ve been feeling under the weather, and this seemed easy enough. No cooking or baking involved.  It ended up being very rich and delicious, sort of surprising given it only has four ingredients. It would, I think, make a really great summertime dessert. It’s also pretty heart healthy and great for any of you out there on low carb diets. Just sayin’.

 

Ingredients

 

1 cup milk

2 ripe avocados

3 TB ground almonds, or more depending on desired consistency

2-3 TB sugar, or to taste

pudding

 

 

Directions

 

1.   Add everything to the blender. Blend. Chill. Serve.

*If you want chocolate and to mix it up, throw in some cocoa powder.  For realz.*
