Ok, I know I’ve been super slacking lately, and you’d think with a country like Italy I’d be all about it. With a few injuries, a trip and a lot of eating out, I’ve been a bit distracted, with only enough time to remake the White Chocolate Bread. I even resorted to eggs for dinner one night. Unacceptable when there are so many delectable Northern Italian dishes to be made. So this week, I buckle down and jump into Northern Italy head first.
Northern Italy for my purposes includes Val de’Aosta, Piedmont, Lombardi, Venuto, Tretino-Alto Adiga, Venice and Lingura.
A lot of favorites come from Northern Italy- stuffed pastas, polenta, risottos, and the use of heartier meats such as beef and veal. And unlike the heavy use of olive oil that I’ve seen in the past two regions, back comes the butter ala France. Finally, the tomato plays a supporting role in the northern regions, letting fresh herbs and broth-y sauces take center stage. Desserts are equally rich: panna cotta or hazelnut cake, creamy chocolate and gelato.
