So long, Boston. Hello, Chicago. Hello Individual Tiramisu Parfaits.

Coming home was bittersweet, as it very often is. Even though I was away for conference-work, Boston was a hoot, and I was not ready to face the reality of work-work just yet, but back at it I am with a vengeance.  Admittedly, it’s nice to sleep in my own bed and eat my own food, and there really is nothing like coming back to a living creature so ecstatic to see you that you can’t pee alone. I mean, that’s love, right? It’s new, this pet-parenting thing, but despite the lack of pee privacy, I’m digging it.

It’s in these post-trip weeks that quick food is necessary and required because groceries are limited, the rushed pace of life continues without any regard for the suitcase that needs unpacking, the laundry that needs to be done, or the emails that need to be answered. As they say, adulting is hard. Single adulting can sometimes be harder (not that I am saying that parenting adulting isn’t hard, just hard in a different way. Not hating on anyone else!).

Quick food also means quick dessert and that is what I’ve got for you today with these Individual Tiramisu Parfaits.

I didn’t actually intend to post this, but after serving it to E for dinner a few weeks ago, she insisted. No, demanded. So E, this one’s for you.

It’s my quicky take on tiramisu. Yes, tiramisu done right is fantabulisticulous and one of my favorite desserts but sometimes all that from-scratch ain’t happening. When all you want is creamy, sweet, boozy goodness, no one has time for all of that.

I threw this recipe together on a whim and passed E’s “I am Italian, here me roar” stringent standards, so I hope you excuse the lack of authenticity and let it pass yours, too. It really is delicious.

Individual Tiramisu Parfaits

Quick and easy, ladyfingers are layered with cream and Kahlua in these delicious individual tiramisu parfait cups.

Ingredients
  • 6 store-bought pre-packaged lady fingers
  • ½ cup Kahlua
  • 1 cup part-skim ricotta cheese
  • 2 TB granulated sugar
  • 1 tsp vanilla extract
  • ½ tsp orange zest (optional)
  • 1/3 cup whipping cream
  • 3 TB granulated sugar
  • Cocoa shavings, to top
Directions
  • Step 1 Pour the Kahlua in a shallow bowl. Place the lady fingers in there and let soak about 2 minutes, flip them over and let them full soak in more. Cut them in half and set aside.
  • Step 2 In a bowl, whip the cream to medium-stiff peaks, along with the 3 TB granulated sugar. Set aside.
  • Step 3 In another small bowl, mix the ricotta, 2 TB sugar, vanilla and orange zest. Mix well and fold in ½ of the whipped cream.
  • Step 4 You can do this into 2 or 3 layers. Assemble by placing 3 lady finger pieces in a serving glass, layer with ¼ the ricotta mixture. Add another layer of 3 lady finger pieces and another ¼ ricotta.
  • Step 5 Top with ½ of the remaining whipped cream and top with chocolate shavings. Repeat with a second serving glass. Refrigerate until ready to serve, or serve immediately. The longer it sits, the stronger it gets.
