Microwaved Baked Apples

What a week, what a week! Time for something easy- microwaved baked apples.

As the story goes, before we all settle into a nice three-day week next week, there is much work to be done! Not only is work being work, but Thanksgiving tends to require lots of planning, and pre-planning some more.  For instance, Mom has already bought the bread to dry out for stuffing and extra turkey bits to make the gravy.  By the time the big day comes and goes, the last thing we want to think about is breakfast (or, what to do with those leftovers. Ideas for that, coming next week).

Post-Thanksgiving breakfast. I got ya. 

Don’t worry. It’s so easy. And so versatile. And so, so delicious. And will make you feel a little better about all the stuffing that you ate the day before.

God, I love stuffing. 

I digress.  These apples.  My mom used to make these microwave baked apples for us for breakfast as kids. They’re perfect for cold winter mornings, where we try to tuck in under the blankets in our PJs for just a little bit longer. Despite being made in the microwave, they still manage to fill the house with a bit of that magic cinnamon apple smell.

The best thing about these (despite being done in 4 minutes), is that you can do whatever you want to them! The base is simple:

Core your apple.

Fill with 1/2 TB brown sugar.

Sprinkle with cinnamon.

That’s it! The rest is up to you.

I’ve topped one of mine with Greek yogurt and finished it off with a bit of granola for crunch.

The other, just some salted pecans and a bit of cream…

The cream, in case you are wondering, mixes with the juice from the apples and the syrupy brown sugar to create the most delicious caramel.  A caramel apple, if you will.

Any way you slice it, it’s the perfect antidote to a day of overindulgence.

Microwaved Baked Apples are the perfect breakfast, dessert or snack- in an instant! Choose your own adventure with toppings and flavors - all you need is an imagination.

Ingredients
  • For the apples:
  • 2 apples, your preference
  • 1 TB brown sugar
  • sprinkle cinnamon
  • Optional toppings:
  • yogurt
  • granola
  • nuts
  • whipped cream
Directions
  • Step 1 Core the apples and cut a cross on the top of each apple, about 1″ down. Place each apple in its own microwave-safe bowl.
  • Step 2 Sprinkle each apple with 1/2 TB brown sugar and a sprinkle of cinnamon.
  • Step 3 One apple at a time, microwave on high for 4 minutes.
  • Step 4 Top each apple as desired. Enjoy- but careful- it’s hot!

  • Baked apples was one of the snacks Mimi made us each week. Without all the extras. I haven’t had one in years but keep thinking about them. I should make one soon. Soonish.

    • I guess somehow this awesome snack/breakfast whatever faded away, because most people I know used to eat them as kids!
