Monday Musings

Monday Musings

Hello, Monday.

The long weekend days continue, but hopefully for not much longer. I’m working on moving the last few small things from one house to another.  I spent my St. Paddy’s painting my new bathroom green, and I only have one more room to paint before my new home is looking as I imagine.  Yesterday was my first day since leaving for Vietnam when I could sleep in, not get up and rush around, and just relax – and it was glorious. Hoping it will become less of a rarity in the weeks to come.  But for now, I’m bracing myself for just a bit more.

Wishing I was sitting Saigon-riverside with a cocktail right about now (pictured above).

A few bits to share this week. I hope you had a great weekend, and I’ll be back with some more food fodder soon!

Why we should care about Puerto Rico (besides the obvious reasons).

In honor of St. Patrick’s Day, a look at Ireland. I was so enchanted by it on my visit there 6 years ago, and I can’t wait to go back, hopefully soon!

So…still think arming teachers is the solution?

Why are you still working 70 hours a week

Here’s to never being defined by your limitations. Thanks for that, and all your other lessons, Stephen Hawking.

Sweden is so good at recycling, they have actually run out of garbage.  True story.

An oldie, but can we ever have enough of Julia?

Crepes, a perfectly simple supper (or breakfast!).

Next St. Patrick’s Day, this is THE cake (though I suggest a Bailey’s cream cheese frosting)

With my leftover Guinness, I think I’ll be making this bread later on in the week.

Have the best one yet!
