Bruléed whipped goat cheese sandwiched between sweet cinnamon graham crackers and creamy Swiss milk chocolate for these grown-up goat cheese s’mores.
A few weeks ago when I was home for the 4th, a few of us were standing around waiting for fireworks. Nearby, on one of those outside fire pits, a group of kids were roasting marshmallows to make s’mores using flat marshmallows. FLAT marshmallows. I mean, is that even a real marshmallow? The 35+ crowd that I was with and I took no time at all to comment on this, lamenting in a “what has this world become?!” way about the invention of flat marshmallows. I mean, isn’t half the fun squishing said marshmallow into messiness to fit into one’s mouth (the other half being, playing with fire, obviously)? It was then that one among us commented that it was truly a sign of the times- kids roasting flat marshmallows around a fake campfire. It made me sad, so I made these Bruléed Goat Cheese S’Mores to make me feel better about the world.
However, it’s not lost on me that less than two week after silently berating others for their fake s’mores, I’m going to go ahead and ruin them myself, a more grown up version, blow-torched for the campfire effect that cannot be safely achieved in my 400 square foot apartment.
Is it even a s’more without a marshmallow? Let’s see.
The idea for this came when I was researching the contents of my Genevan picnic basket. Browsing through Pastoral’s website, they had these grown-up s’mores for order and since it didn’t seem like a bad idea at all, I figured I’d recreate them here in my own way. I love goat cheese, chocolate, grahams and playing with fire, so I was on board.
You may be thinking this is gross but hear me out. If you’re like Mom and think s’mores are just gross based on their too-sweet factor, then you’ll love these because the goat cheese add some tang and tart to balance out the milk chocolate and bruléed sugar. If you like s’mores because they are so sweet, well, these still have plenty of that for you.
The girl scout deep within me shakes her fist at this s’more abomination, but the grown up me pushes her aside because they are just so unexpectedly good.

Goat Cheese S'mores
Ingredients
- 2 ounces goat cheese
- 1 1/2 TB heavy cream
- 4 TB raw sugar (regular granulated would work as well)
- 12 regular size cinnamon graham cracker sheets
- 2 bars milk chocolate
- Blow torch
Directions
- Step 1 In a small bowl, whip together the goat cheese and cream (adding more if needed) until smooth and creamy. Set aside.
- Step 2 Break each graham sheet in half (so 2 mini-rectangles) and break the chocolate bar to fit one side. Cover the chocolate with the goat cheese and sprinkle until the whole is covered in a layer of sugar. Using the blow torch, burn the sugar until golden brown, careful not to burn it. This should also melt the cheese and start to melt the chocolate. Top with the remaining half graham cracker, and squish to enjoy. Repeat with remaining ingredients.
