Yesterday the thermostat said 99F.  And I died a little inside. This Thai iced coffee may have saved me.

Dire circumstances like that mean cooling from the outside (as in dunking oneself often into a pool, lake or ocean) and the inside (ice cream, ice cubes, iced tea, iced coffee…).

Iced Coffee! Did you know at I accidentally gave up coffee like a month ago? What happened is this: one Friday I got to work hot, sweaty and ugh and the thought of a hot beverage to kick off the day seemed too much to bear.  Then the next day, Saturday, I got up for the gym, grocery, laundry and cooking and before I knew it, I forgot!  Cue the withdrawal headache later that night and since then I decided I didn’t really need the coffee and that I should just go with it when I want the coffee.

thai iced coffeeIt’s worked so far and I still maintain my cheery demeanor (says I).  And since now coffee is for fun rather than necessity, I’m mixing it up today with a Thai iced coffee: cold coffee, sweetened condensed milk, cardamom and 2%.

It’s wonderful.  Do it to get you through these dog days and steamy nights.

Recipe notes:

I used sweetened condensed coconut milk because I found it wandering around World Market and impulse bought it and then needed something to do with it. Here it is.  If you can find it (or make your own), its adds an extra hint of Far East flavor.

The cardamom is an idea that I borrowed from Steamy Kitchen because who loves cardamon? This girl.

Thai iced coffee is a delicious cold beverage sweetened with condensed milk, and spiced up with some ground cardamom for a lovely anytime drink.

Ingredients
  • 2 cups strong brewed coffee, chilled
  • 1 cup 2% milk
  • 4 TB coconut sweetened condensed milk
  • 1/2 tsp cardamom powder
  • ice cubes, to serve
Directions
  • Step 1 In a liquid measuring cup, add the coffee and whisk in the condensed milk until smooth. Add the milk and cardamom powder and whisk to combine and blend well.
  • Step 2 Pour over ice and enjoy!

  • yuuum! I’m brewing a full pot (well, full mini pot that makes 2 mugs) of coffee, hot homemade cafe au lait in the morning – the basement is so cold that I’m still enjoying a hot coffee – and iced in the afternoon.
    I smuggled (completely legally bought and brought home) coconut creamer from buffalo and have been enjoying it in my coffee the last 2 weeks.
