Peach Guacamole

Guacamole.  Stateside here, we’re fans.  Dare there be a barbecue, backyard party, game night, birthday party or office get together without it? No, and everyone will go wild for this peach guacamole.

I can’t even think of the last party I went to that was guac-free.  Or at least chip-free. And chips just beg for guacamole. Amiright?

In continuing with the season’s bounty theme that I started with the roasted cherry chutney (have you made it yet?), my peach guacamole used up the plethora of peaches and avocados that came with this week’s vegetable delivery.

It just seemed like the obvious solution to my veg excess. Plus, I love peaches so, so much. They are my favorite fruit, but only if you hit them ripe and perfect during those special few weeks during the summer. You know. The weeks that just happen to be around my birthday.

I digress, again.

Moving on, have you ever made guacamole from scratch? it’s so easy- and you can do so many things with it! Like this blueberry walnut. Or this pineapple black bean.

But we’re talking peaches.  While it’s not quite THE season for peaches (which, in my observation and experience doesn’t swing around until the end of July-ish), these not-super ripe peaches hold their heft with the avocados and don’t get all mushy and weird. We like that for our chips.

It’s a one bowl, chop, smash, fold ordeal.

Chop the onions, garlic, peaches and peppers.

Smash the avocados.

Throw everything else together.

Fold it all until it’s as you like it.

It’s that simple.

Peach Guacamole

Traditional guacamole has a fruity twist in this peach guacamole, with fresh peaches, ripe avocado and a little heat- an easy and healthy side

Ingredients
  • 2 large avocados, diced
  • 2 medium or 1 large slightly-firm peach (about 1/2 cup)
  • ¼ cup red onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno, minced
  • ¼ cup cilantro, diced
  • 2 tsp cumin
  • 1/2 tsp chili powder
  • 1 lime, juiced
  • 1 tsp salt
  • 1 tsp pepper
  • 4 dashes tobacco
Directions
  • Step 1 Make the guacamole by mixing up everything but the peaches in a bowl, smashing the avocado with a fork to blend it well with all the 
ingredients. Once that is smashed to desired consistency, add the chopped peaches and continue to fold until all the ingredients are well incorporated.
