We’re mid summer. It’s hot, but over here the AC is back in business and we’re feeling all right. Ready to hit the pool and the tennis courts and ride out the rest of summer with this ginger mango lassi in hand!!
When it’s hot, cooking is haaard. Like, I’m eating salads all the time (though, Mom decided to make chili last week so I’ve tucked into a few sweaty bowls of that recently). Unlike the rest of me, my creative brain gets frozen. What to do?
I thought of all the people all over the world where it’s hot all the time, and decided to take a look at what they’re eating. I’m sure it’s more than salads and ice cream.
India. Lassi! I’m looking at you.
I’m not one to typically drink my calories, but do you know how refreshing this was after some long, hot sweaty tennis (there’s that word again, but it’s sweaty business over here)? It was perfection, so good and so perfect that I figured I needed to tell you of its perfection.
And so easy! Five ingredients. We go:
plain yogurt
mango
ginger
water
sugar
That’s it! While ginger isn’t really the authentic way to make it, I was inspired by some mango salsa mom made over the 4th and decided to throw that in for kicks. If possible, it makes it even more refreshing. Fresh ginger really does have that power, don’t you agree?
So the next time you need to beat the heat, give these flavors a whirl!
