Golden Milk Oatmeal

Hey friends! 

I made a thing! I know, it seems like a hot second since I was in the kitchen, but you know, holiday leftovers, laziness, more leftovers and just an attitude of ENOUGH IS ENOUGH with the food, I needed a break, and have been subsisting on nibbles and bits until I could get my wherewithal back to cook. Now that I’m back in the zone, let’s start with breakfast and some golden milk oatmeal!

This time of the year, many people are talking resolutions and veer towards tried-and-true healthy eats, and unless you’ve been living under a rock for the past year or so, you’ve been hearing all about the push to use food as medicine (yay!) and the various benefits of certain foods.

Turmeric, being one of them, touted for it’s anti-inflammatoriness.  

You’ve seen it here a lot, because I love a good curry, but what about if we twisted it towards sweet?

Golden milk/turmeric tea has also been all the rage and while I can’t say that I’ve really been a fan, I figured adding it to my oatmeal might just be the way to turn me into a convert.  I was right!

Traditional ingredients start a base with milk (you can also you a milk alternative if you fancy it), turmeric, cinnamon and ginger. A touch of honey for sweetness. Some toasted coconut flakes and almonds for crunch.

Because you know I like to put all the toppings on all the things. 

The result was amazing, warm and delicious and hearty enough to get us through those months where resolutions rule and hopefully beyond through the new year.

Golden Milk Oatmeal

Touting the same anti-inflammatory properties as its liquid cousin, this golden milk oatmeal has touches of sweet and savory.

Ingredients
  • 1 cup old-fashioned oats (not instant)
  • 2 cups 2% milk (or, any alternative milk of choice)
  • 2 cups water
  • 2 1/2 tsp ground turmeric
  • 1 tsp ground ginger
  • 1 1/2 tsp ground cinnamon
  • 2 TB honey
  • 1/2 tsp vanilla extract
  • 1/4 cup unsweetened shaved coconut, toasted
  • 1/4 cup sliced almonds
Directions
  • Step 1 In a medium saucepan, add the oats, milk, water, turmeric, ginger, and cinnamon. Heat over medium-high heat, stirring occasionally until it mixture comes to a boil. Reduce heat to medium and let simmer, stirring occasionally, until most of the liquid has evaporated and mixture is quite thick. Remove from heat and add the vanilla.
  • Step 2 Divide the mixture between two bowls and add 1 TB honey to each. Give it a quick stir to incorporate the honey and top each both with 2 TB coconut and 2 TB almonds. Serve warm.
