The other day I shared my latest bread obsession, and today I’m throwing out a caper and goat cheese spread that would be just perfect to go on top!
First though, are we okay? Are you in a self-quarantine? Working from home? About to be? Panicking? I feel ya, but the human spirit is stronger than this and we will all get through it. If you’re about to be locked in our house for a bit, make sure you’ve loads of chocolate, maybe some alcohol, some good books and your friends on speed dial. If you’re looking for some real food ideas using pantry staples, this is perhaps one of my very faves, coming together with minimal ingredients. Like, 5 pantry staples. I’m doing my best to remain positive about my trip next week. It’s still on for now, but it’s really minute by minute. Keeping everything crossed, from my toes, to the braid in my hair.
Moving on to this day’s recipe. When it comes to what I use to butter my bread, I’m usually dedicated to either of two toppings: good ole peanut butter (a layer of creamy topped by a few dollops of crunchy) or good salted Irish butter. However, when company comes calling I like to mix it up with something a little more something, and this spread hits the jackpot with flavors that I’d encountered more than a few times on the Emerald Isle.
Like the bread, I’ve adapted this from Homemade Winter to make it mine. The biggest change is swapping cream cheese for goat cheese just because I have no allegiance to cream cheese in any manner, but I love goat cheese in every one. Mixed nice and good with some red onion, capers, parsley and lemon, it’s so great as an appetizer, a snack, or dolloped on my bread with some smoked salmon for a treat.
Think of it like the Irish version of lox and cream cheese, that New Yorker classic. I think then it’ll soon be yours!
Caper and Goat Cheese Spread
Caper and Goat Cheese Spread is the perfect appetizer, combining fresh parsley, creamy goat cheese, salty capers and crunchy onion.
Ingredients
- 6 oz goat cheese
- 1/2 large red onion (about 1/3-1/2 cup)
- 2 heaping TB capers, no liquid
- 1 lemon, zested
- 1 small handful (about 1/4 cup) fresh parsley
- Bread, to serve
- Smoked salmon, to serve
Directions
- Step 1 Place the onion, parsley, capers and zest into the bowl of a food processor and chop until fine. Add the goat cheese and pulse just enough so that everything is combined.
- Step 2 Serve on fresh bread or crispy crackers.
