We are coming upon the season of fruit desserts. I mean, berry season is juuuust around the corner, but I’m offering up a completely different way to crumble- with this delicious fresh pineapple crumble.
Fruit desserts are not my favorite (so I say) and each and every one of my friends will fight me on this as I continue to churn out fruit desserts (see here, here, here, here and here). So sue me – I can’t just make chocolate ALL the time.
Moving on, the idea for this vacation recreation stuck in my head over a year ago after I got back from Hawaii. But…sometimes the best intentions take a few years to come to fruition. I found myself revisiting this idea after I ended up with a bunch of pineapple left over from a brunch I hosted. I actually love pineapple on its own, but wanted to make this one a little different.
My idea was to make a cobbler, but what I actually wanted to make was a crumble. There is a difference- apparently- and for more information on that distinction, check this out.
Because I don’t’ often make these sorts of desserts, I can’t say that I have a tried and true recipe. I cobbled one together (no pun intended) and did a little thing to make it really scream Hawaii- I added macadamia nuts.
Sure did. I brought a bunch home with me from that trip and to me, I couldn’t think of any better way to pay homage to the islands.

Fresh Pineapple Crumble
Fresh pineapple crumble adds Hawaiian flair to traditional fruit desserts with an added macadamia nut crunch on top.
Ingredients
- ¼ cup unsalted butter
- ¼ cup + 3 TB all-purpose flour
- 1/3 TB light brown sugar
- ¼ cup + 2 TB old-fashioned oats
- 1/3 cup chopped macadamia nuts
- 2 TB shredded unsweetened coconut
- ½ tsp salt
- 1 ½ tsp cinnamon
- 1 TB lemon juice
- 1 pound diced fresh pineapple
Directions
- Step 1 Preheat the oven to 350F.
- Step 2 In a small bowl, mix together the pineapple and the lemon juice. Set aside.
- Step 3 Meanwhile, mix the butter, salt, brown sugar, oats, flour, salt and cinnamon together. Using your fingers, rub the ingredients together until everything is well incorporated. Add the coconut and macadamia nuts and incorporate. The mixture will be crumbly.
- Step 4 Place four oven-safe ramekins on a baking sheet. Divide the pineapple amongst them and top each with approximately ¼ cup of the crumble mixture.
- Step 5 Bake 30-40 minutes until golden brown. Serve warm with ice cream or whipped cream.
