We’re coming to the end of summer, and I can’t think of a more perfect way to celebrate the transition into the next season than with this lemon and feta dip.
Barbecues are coming to an end as the weather cools, but tailgates are kicking into gear, and this little dip will transition perfectly from one to the next. Because I don’t know about you, but I’ve already got football on the brain.
It’s so easy. Just dump into the processor and blitz until smooth. Just the kind of thing that you can throw together when you almost forgot you had to bring a dish to a thing, and are running out the door.
We’ve all been there. And with all the things that happen in the fall, it happens more than we’d like.
And while I’m usually the one bakes the dessert from scratch or hauls in a pot of something delish, sometimes I need a break, too.
Simple ingredients meant to shine on their own with little work required. You can serve it with chopped veggies or freshly baked pita chips.
I’m reiterating again that it’s soooo good. I even packed it as a snack for a lake day, and everyone happily dug with sunscreen covered hands while wrapped in towels with slightly sunburnt noses. Definitely a fan favorite, but be sure to keep it on ice.
I adapted this recipe from Summer Food adding a bit more garlic and a sprinkle of parsley because…ya know.
This would also be fab spread on a sandwich for lunch! Think rotisserie chicken leftovers, roasted red peppers, crusty bread and this dip. OMGIMMAKINGITASAP.
Hmm. It may even be great for this oldie-but-goodie chicken pasta dish!
