Festive Holiday Party Spread

I’ve found a way to elevate my festive holiday party spread: spiced pecans.

If you’ve been around these parts you know I love a nut – on salad, sprinkled over oatmeal, chopped on pancakes, baked in waffles, dropped in any cookie, and eaten by the handful as a snack when I’m making dinner. And while I don’t discriminate, I’d argue that favourite nut is arguably the pecan.

That’s pronounced pea-can, for your information.

My college friends can confirm this when I used to order pecan pancakes every time we’d go out for breakfast, laughing at my Western New York pronunciation of this tasty nut.

Flash forward, erm…let’s just say a lot of years later, my love hasn’t changed, but I’m upping my game from just pecan pancakes and, with the help of Zingerman’s Deli, giving new oomph to a typical holiday party spread.

What’s on the menu?

Let’s start with a cocktail.

I suggest an espresso martini, with a hint of mint to get us in the holiday spirit.

Too early in the day for a martini? Pair bourbon with this mint simple syrup for a winter take on this fall cold brew favourite.

Kiddos around? Add the mint syrup to hot chocolate– and don’t forget the marshmallows!

As a true millennial child of the 80s’ and and perhaps somehow influenced by the fact that Mom never let us have Lunchables, I love a charcuterie board (remember the epic sweet and savoury ones I put together a few months ago?).  This season we’re getting a little fancy and upgrading a run-of-the-mill cheese ball with goat cheese, cranberry compote and spiced pecans.

Served with my favourite top seedz crackers, the every bite is sweet, tangy, crunchy, creamy and delicious.  It truly hits ALL the notes.

(The best part? Stash some away for tomorrow – paired with cranberry pecan bread, it sure would make the most epic grilled cheese sandwich!)

To truly round out your cheese board, add something old, stinky and blue.

Fresh fruit, candied fruit, more nuts (are there ever too many nuts?)

Spiced Pecan Goat Cheese Log

A festive twist on a traditional party snack, this spiced pecan goat cheese log elevates a classic.

Ingredients
  • For the cranberry compote:
  • 1/4 cup fresh cranberries
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 4 ounces soft goat cheese
  • 4 ounces cream cheese
  • 1/2 tsp black pepper
  • 2 cups Zingerman's spiced pecans, finely chopped into small pieces (a food processor works best)
  • 3 TB chopped fresh rosemary
  • Crackers or toasted baguette, to serve.
Directions
  • Step 1 First, make the cranberry compote. To a small saucepan, add the cranberries, sugar and water. Over medium heat, bring to a gentle boil, letting the cranberries pop and soften, about 10 minutes. Once all the berries have softened, remove from the heat, put in the refrigerator and let cool completely.
  • Step 2 Once the compote has cooled, make the cheese log. To a mixing bowl, add the goat cheese, cream cheese and black pepper. Using an electric mixer, blend until completely combined and smooth. Add the cooled cranberries and mix just slightly, enough to combine but also leaving a pretty red swirl throughout the cheese.
  • Step 3 Place a sheet of plastic wrap on the counter. Place the cheese in the middle and form into a tight log. Refrigerate for 1 hour to ensure the cheese has set.
  • Step 4 Just before serving, place the pecans and chopped rosemary in a shallow bowl. Unwrap the cheese log and press into the pecans on all sides, coating completely.
  • Step 5 Serve immediately with your favorite crackers or toasted baguette.

Spiced Pecan Cupcakes

For these cupcakes, I took my favourite vanilla cupcake recipe and used chicory pecan bitters in place of vanilla extract to add a little something for the holidays. I stole the frosting from Mom’s classic Hungarian walnut torte and swapped those toasted walnuts for spiced pecans

Can I say heaven?!

With a festive holiday party spread this good, you’ll be good and full to tuck in for a long winter’s nap, with visions of spiced pecans dancing in your head.

Spiced Pecan Cupcakes

Spiced Pecan Cupcakes have a vanilla-cinnamon cake base, and topped with a luscious frosting full of chopped spiced pecans.

Ingredients
  • For the cupcakes:
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • pinch salt
  • 1 1/2 tsp baking powder
  • 3TB unsalted butter, room temperature
  • 1/2 cup whole milk
  • 1 eggs
  • 1 tsp chicory pecan bitters, or vanilla extract
  • 1/2 tsp cinnamon
  • For the frosting:
  • 1/2 cup unsalted butter
  • 2 cups confectioner’s sugar
  • 2 -3 TB heavy cream
  • 1 tsp chicory pecan bitters or vanilla extract
  • 1 cup finely chopped Zingerman's spiced pecans
  • More pecans, to garnish
Directions
  • Step 1 Make the cake: Preheat the oven to 325F.
  • Step 2 
In a large mixer bowl, add the flour, sugar, butter, baking powder and salt. Mix together until it is a sandy consistency.
  • Step 3 
In a separate liquid measuring cup, add the milk, egg and bitters.
  • Step 4 
Slowly add the wet to the dry, mixing until just incorporated. Do not over mix.
  • Step 5 
Add the batter to 9 cupcake liners, filling about 2/3 of the way through.
  • Step 6 
Bake for 25-30 minutes, until the cake springs back when touched and a tester comes out clean. Set aside to cool.
  • Step 7 While the cupcakes cool, make the frosting. In the bowl of a mixer, beat the butter on high until thick and fluffy, about 5 minutes (the longer the better). Add the vanilla.
  • Step 8 
Turn the mixer speed down and slowly add the confectioner’s sugar and 3 TB cream, scraping the sides of the bowl and adding more cream if necessary to reach desired consistency.
  • Step 9 
Add the pecans, making sure they’re well mixed in.
  • Step 10 Top the cooled cupcakes with the frosting. Serve and enjoy!
