Slow Cooker Green Chile Stew

Stew season continues and is in full swing in Casa THB. I’m throwing this back to my trip to New Mexico a few weeks ago with this slow cooker green chile stew.

Admittedly, I found the food in New Mexico a bit underwhelming.  I wanted it to be more Mexican, or Tex Mex and it was clearly a world unto its own. When I confessed this to C when she got to town, she laughed and straight up said, “I didn’t think you would.”

That made me feel validated at least.

Still, I did find some gems. I loved the posole, but you’ve seen that before. Similar but different is this green chile stew. Equally delicious and because it was a slow-cooker meal, very easy.

Now, in looking for a recipe for this, it seems like it’s almost the way of regular chili. Everyone has a recipe. Everyone thinks theirs is the best and most of them are all equally delicious.  I took that attitude and created a hodgepodge recipe of my own, and it totally was a decent copycat of what I had in Santa Fe.

I really wanted to add black beans, but that seemed maybe a little sacriledge. But I say it would be a swell addition (if you’re a fan of beans like I am).

Slow-Cooker Green Chile Stew

This homemade slow cooker green chile stew is made with seasoned pork shoulder, potatoes, and plenty of that irresistible green Chile flavour- from enchilada sauce!

Ingredients
  

  • 2 pounds pork shoulder, cut into 1 1/2" pieces
  • 1 yellow onion diced
  • 2 TB olive oil
  • 4 cloves garlic minced
  • 1 jalapeno diced
  • 1 tsp oregano
  • 1 10oz can green enchilada sauce
  • 2 4oz cans chopped green chiles
  • 2 yellow potatoes, diced about 2 cups
  • 4 cups low sodium chicken stock
  • 2 limes juiced
  • ½ cup chopped fresh cilantro

Instructions
 

  • To the bowl of a large stock pot, or your slow cooker, add the olive oil over high heat. Add the pork in a single layer, and sear the pieces on each side about 1 minute. Remove from the pan.
  • Back to the slow cooker pot, add in the onion, jalapeño, ,garlic and oregano. Cook until the onions are translucent. Add the pork back into the pot, as well as the stock, enchilada sauce, chiles and potatoes.
  • Transfer the above into the bowl of a slow cooker (if your bowl was not removable) and cook over medium-high heat for 4-5 hours until the pork and potatoes are tender.
  • To the finished stew add the lime juice and serve with fresh chopped cilantro.
