Hello, Sunday.
Hello friends! I’m back in the swing of things after returning from Spain. Why does it seem like 1) life NEVER stops and 2) it takes longer to readjust to the times after each trip? I wish I wasn’t so stingy with my vacation time , and gave myself an extra day to come home and adjust instead of logging into my work computer the second I hit US soil. Yes, that was me in the Delta lounge on Monday so as to not have to waste a vacation day on a travel day.
In any case, yesterday I got a great nap in, followed by a great workout and I feel ready to face the week ahead with fresh eyes, because this last one really just dragged.
That said, I’m excited to share more about my trip, and some delicious vacation recipe recreations to boot. But first, the week. Let’s get after it:
I mean, should I go back to Spain? Fuuu….
So happy to see Kate out and about, but really, can’t the girl rest? Also, I’m sad she feels like she still needs to wear 4″ heels. I mean, we all know she’d rather be rocking the boat shoes. Anyway, Prince Louis for the win, as always.
Oh, Lord. This is a fright– and a nightmare.
Even if people were calling me hot, would I want to be compared to a rodent? Not a flattering adjective, no matter how you cut the cheese.
Would you buy food from Etsy? Not candy, but like…Jollof rice and Mac & cheese? I’m skeptical.
Since it’s summer and we’re into simplicity, I’m a big fan of this French yogurt cake. Give it a try!
If you’re heading to Paris for the Olympics, or are still thinking about it (um, procrastinator!), there are some events that won’t break the bank! Check ’em.

Hello, June!
Geez, can we believe we’re already halfway through the year? Wild. Just wild how time flies. So far, 2024 – I’m having fun. Let’s keep the good times rolling.
I’m in Spain, fighting off little jet leg with the help of good food and good friends. The best remedy for any ails.
Here’s the forecast for this month:
wishing: my wonderful friends a long and happy marriage!
hoping: for safe and smooth travels for all this summer.
thinking: of all the summer-maintenance to-dos that need to be added to the list when I get home.
praying: for all of those suffering around the world.
planning: denmark and germany, coming at me next month.
dreaming: of travels not yet taken.
wearing: new shorts, and these sneaks to carry me on the thousands of steps we’re walking.
eating: eeeeerything.
watching: all the people. also, ted lasso (yes, finally). also, the french open.
reading: the nightingale.
missing: my crawley, always.
Spicy chicken stuffed sweet potatoes are filled with shredded chicken, a crisp apple slaw and topped with a spicy kimchi mayo for a tasty well-balanced meal!
It’s been a minute since I made a new cookie recipe, and so we’re coming in hot with these butterscotch, pistachio and dark chocolate chip cookies.
