Cook the quinoa with the water until all the water is absorbed and the quinoa is fluffy.
1/2 cup quinoa, uncooked, 1 cup water
Preheat the oven to 350F.
When the quinoa is cooked, mix it with all of the other ingredients for the loaf (through red pepper flakes) Mixing by hand works the best.
Place half of the meat mixture in a 8 x 8 baking dish.
1 onion, 1/2 cup parsley, fresh, chopped, 1/2 pound dark meat ground turkey, 1/2 pound light meat ground turkey, 1 tsp salt, 1 tsp ground pepper, 1/2 tsp cinnamon, 1/2 tsp allspice, 1/4 cup ice water, 1/2 tsp crushed red pepper flakes
Spread the sautéed onions and toasted almonds over the first layer of meat. Pat the rest of the meat mixture on top of the onions and nuts.
1 onion, chopped and cooked, 1/2 cup slivered almonds
Score into squares or diamonds and cover with ¼ cup of olive oil.

Bake for 1 hour and 15 minutes. Let rest for 15 minutes before serving.
