Traditional Lebanese meat dish revamped with ground turkey rather than beef, but with all the same spices of the classic dish.

Ingredients
  

  • ½ cup quinoa, uncooked
  • 1 cup water
  • 1 onion about 1/2 cup
  • ½ cup parsley, fresh, chopped
  • ½ pound dark meat ground turkey
  • ½ pound light meat ground turkey
  • 1 tsp salt
  • 1 tsp ground pepper
  • ½ tsp cinnamon
  • ½ tsp allspice
  • ¼ cup ice water
  • ½ tsp crushed red pepper flakes
  • 1 onion, chopped and cooked about 1 cup
  • ½ cup slivered almonds toasted
  • ¼ cup olive oil

Instructions
 

  • Cook the quinoa with the water until all the water is absorbed and the quinoa is fluffy.
    1/2 cup quinoa, uncooked, 1 cup water
  • Preheat the oven to 350F.
  • When the quinoa is cooked, mix it with all of the other ingredients for the loaf (through red pepper flakes)  Mixing by hand works the best.
  • Place half of the meat mixture in a 8 x 8 baking dish.

  • Spread the sautéed onions and toasted almonds over the first layer of meat. Pat the rest of the meat mixture on top of the onions and nuts.

  • Score into squares or diamonds and cover with ¼ cup of olive oil.

  • Bake for 1 hour and 15 minutes. Let rest for 15 minutes before serving.
