Gluten-Free Irish Soda Bread Buns

Gluten-free Irish Soda Bread Buns are a twist on traditional Irish soda bread, using a mix of GF flours and the twist of orange olive oil.

Ingredients
  

  • 1 cup sorghum flour
  • ½ cup almond flour
  • ½ cup potato starch
  • ¼ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp xantham gum
  • 1 tsp fine sea salt
  • cup orange infused olive oil
  • ½ cup almond milk
  • ½ tsp vanilla extract

Instructions
 

  • Preheat the oven to 375F. Grease a 12-muffin pan, or line with paper liners.
  • In a mixing bowl, whisk together the sugars, sorghum flour, almond flour, potato starch, baking powder, baking soda, xanthan gum and sea salt.
    1 cup sorghum flour, 1/2 cup almond flour, 1/2 cup potato starch, 1/4 cup light brown sugar, 1 tsp baking powder, 1 tsp baking soda, 1 tsp xantham gum, 1 tsp fine sea salt, 1/4 cup granulated sugar
  • Add in the eggs, oil, almond milk and vanilla. Beat until you achieve a smooth, stretchy batter- about two minutes.
    1/3 cup orange infused olive oil, 1/2 cup almond milk, 1/2 tsp vanilla extract
  • Spoon the batter into twelve muffin cups and smooth out tops.
  • Bake in the center of a hot oven for 22 minutes until the tops are domed and golden, and firm to a light touch. Serve warm.  Slather with butter or your favorite jam.
