Pudim d’ Avocat (Avocado Pudding)

Ok, I have to be honest, I only saw this recipe on one site, so I can’t really give you a thorough account of where this really came from, or why they eat this in Western Africa.  All I learned that Mauritania’s history as a French territory adopted some French influence into its cuisine including, in this instance, Pudim d’Avocat, or avocado pudding.  And all I can say is try it, and I think you’ll be delighted.

Sometimes life is a lot. We want something sweet but dont’ have the effort to make it or inclination to buy it. That’s high level lazy in the world when everything can be delivered with the click of a button, right?

In any case, that’s how I’m feeling today.  This recipe was easy, and one of the few dishes that I could find from Mauritania that sounded interesting. Also, with the emergence of special diets, especially stateside (gluten-free, keto, paleo…the list goes on), I think you’ll find that this recipe actually checks more than a few of those boxes. So you’ve got a sweet tooth but not as much discipline as you’d like, this avocado pudding recipe is for you.

Because avocados are so high in fat (the good fat though!), this ended up being a very rich treat. However, the balance of flavors was so spot on that I was actually surprised how delicious it was since it only has four ingredients. Again, easy peasy and tasty to boot.

Pudim d'Avocat is a traditional Mauritanian recipe for a classic vegetarian pudding of an avocado and milk puree thickened with ground almonds

By:

Ingredients
  • 1 cup milk of your choice
  • 2 ripe avocados
  • 3 TB ground almonds, or more depending on desired consistency
  • 2-3 TB sugar, or to taste
Directions
  • Step 1 Put all ingredients into a blender or food processor and puree until smooth.
  • Step 2 Serve chilled.
