Avocado Toast with Tomato Berry Salad

Today, I’m getting basic. Like, so basic I’m embarrassed that I’m even putting up this recipe. But this blog here is real life, and this is my real life. And this avocado toast with tomato berry salad is really nothing to be embarrassed about.

Yes, I did it. But. BUT! Here me out because the star of this plate is actually the salsa on top: fresh, fruity, savory?  I can’t decide but likely all of the above.
 
If I’m being honest, in my daily summer/fall life, I eat avocado toast at least twice a week for breakfast or lunch. At least.  My fave way to be about it is with some smoked salmon and a runny egg, topped with coarse salt, fresh black pepper and crushed red pepper flakes. I eat it this way 90% of the time and I love it just as much from one time to the next.  However, in an effort to get into the spring of things (pun intended), I whipped up this fruit salsa, inspired by one I saw in Food & Wine and, and decided that it’d go just great on some basically basic avocado toast.
It’s so easy: strawberries, tomatoes, Granny smith. Lime juice or rice wine vinegar to keep it fresh.  Basil if you’re loving it (I am, but I ran out for this iteration).  Put it on top some grilled chicken, seared halibut, or like in this case, eggs on toast.  It sounds weird, but trust.
 
Because eating the rainbow, they say, is the way to go and IMO, basic is the way to be.

Avocado Toast with Tomato Berry Salad

Ingredients
  • 2 slices thick wheat bread
  • 1 avocado
  • 1 tsp coarse salt
  • 1 tsp coarse ground black pepper
  • 1/2 tsp crushed red pepper flakes
  • 2 poached eggs
  • 1 cup grape tomatoes, halved
  • 1 cup strawberries, seeded and quartered
  • 1 Granny Smith apple, diced
  • 1 TB lime juice
Directions
  • Step 1 In a medium bowl, combine the tomatoes, strawberries, apple and lime. Toss well and set aside.
  • Step 2 Toast both slices of bread. Once toasted, one each slice, spread 1/2 avocado, 1/2 tsp salt, 1/2 tsp pepper, 1/4 tsp crushed red pepper. Top each with one poached egg and as much salad as you wish!
