Chorizo Black Bean Burgers
It’s burger season, yo!  Let’s kick it off with these chorizo black bean burgers.

Well, officially come next Friday, right?  I love a good burger (Au Cheval, I miss you) and it’s the one thing I crave, like, really crave, and it’s a hankering that when I have it, won’t quit.  I try to mix it up here, and I’ve got some goodies: blueberry bison, Sri Lankan lamb, Austrian pork liptauer, South African bobotie (*favorite*) and eggplant, to name a few, and today we’re going Mex-ing it up (see what I did there) with a Mexican chorizo black bean burger with a citrus mayo and avocado (avo-course).  
 
 
It’s an easy one. Since chorizo carries with it a pretty awesome spicy punch of it’s own, this requires no other spices! That’s right. Fresh chorizo, removed from its casing, is smooshed up with some smashed black beans and that’s it! I made these in the frying pan since I don’t really use my grill (why don’t i use my grill? someone come cook for me and use my grill) but you can do it either way.  
 
Then, mayonnaise + fresh black pepper + orange juice + orange zest. Done and done.
 
 
And finally, I served these with some taco spiced oven roasted potatoes.  An obvious accompaniment.

Chorizo Black Bean Burgers

Chorizo Black Bean Burgers are a spicy way to jazz up your regulars on the grill.

Ingredients
  • 10 ounces fresh Mexican chorizo
  • 1 14-ounce can black beans, drained
  • 1/4 cup mayonnaise
  • the zest of one small orange
  • 2 TB orange juice
  • 1 tsp coarse ground black pepper
  • 4 hamburger rolls
  • 1 avocado
  • lettuce, to serve
Directions
  • Step 1 In a small bowl, add the black beans and smash them with a fork. Add the chorizo and, using your hands, mix well so that the sauce and black beans are evenly incorporated. Divide into 4 equal portions.
  • Step 2 On a grill (or frying pan) heat to medium-high, add the burgers, evenly spaced, and cook 6 minutes. Carefully flip and cook another 5 minutes or until thoroughly cooked through.
  • Step 3 While the burgers are cooking, make the mayo by combining the mayonnaise, zest, orange juice and pepper in a small bowl. Mix well and thoroughly.
  • Step 4 Once the burgers are done, let sit and rest 5 minutes. Divide into hamburger buns, and serve with mayo, lettuce and avocado atop each.
