Peanut Brittle
Father’s Day is hitting us up this weekend. Did you remember?  Well, if not, good thing I’m here to remind you. And if you need a last minute gift, here’s some peanut brittle to save the day.

Even though Baba (as we called him) is no longer with us, I try to celebrate his birthday and Father’s Day here on THB by making his favorites. Problem: we’ve been trucking along for almost 6 years and…I’ve made all his favorites! Same problem comes around for Mom’s birthday and Mother’s day, my birthday and my brother’s. Our family food secrets, you have them all (well, most. Mom has a few yet left to share).  I had to dig deep on this one.
 
Luckily, my recent trip to Vietnam reminded me of one of Baba’s all time favorites: peanut brittle.  While he wasn’t Vietnamese, being from the Southeast Asia-region gave me some insight onto those little quirks that were all his own.  Like his daily tea habit, peanut brittle was a must during the holidays, and as we’d pass boxes upon boxes of the sweet treat of many a nut variety, it made me smile just a little.
 
With FD approaching, it dawned on me that I hadn’t actually made peanut brittle on its own! I made this macadamia nut brittle cream and this coconut cashew brittle ice cream  (both my favorites) that contain a nut brittle but the peanut variety has been straight up left out. Today I remedy that with our family’s version.
 
It’s so easy.  Six ingredients and 10 minutes later you have the perfect homemade food treat.  I made this during lunch one day. It’s goes so fast- I speak the truth.
 
BUT- be careful- we are talking boiling mad sugar and a burn would be too easy. Mind the caramel.
 
BTW, I’ve decided that brittle-containing ice cream is my favorite.  Nothing gets soggy and…well, it’s a good thing.  Try some yourself!
 
 

Peanut Brittle

This easy peanut brittle recipe is a homemade family recipe of this holiday treat- perfect for last minute gifts or a party snack.

Ingredients
  • 1/2 cup light corn syrup
  • 1 cup sugar
  • 2 cups party peanuts
  • 1 TB unsalted butter
  • 1 tsp vanilla
  • 1 tsp baking soda
Directions
  • Step 1 Use a wooden spoon and mix corn syrup and sugar in a microwave safe bowl for 3 1/2 minutes.
  • Step 2 Add peanuts and microwave for 3 minutes.
  • Step 3 Add butter and vanilla and microwave 2 1/2 minutes.
  • Step 4 Add baking soda and pour onto a well-greased cookie sheet. Spread with a wooden spoon. Let the brittle cool and break into bite size pieces and store in an airtight container.
  • Step 5 Because microwave strengths vary, keep an eye on this this last 2.5 minutes to make sure it doesn’t burn. If it starts to look like it’s getting too dark, stop the time and continue to add the baking soda.
