Fresh Mint Greek Yogurt

Here’s something so simple and clean and delicious and so seemingly nothing. Fresh mint Greek yogurt.  Simple, but certainly worth telling.

First off, don’t freak out because we’re not making Greek yogurt from scratch. I have a job. You have a job. And I’m guessing neither of us has time for those shenanigans today.

Moving on, you know those dishes that you sort of throw together and think, “hey, maybe this will work?” only to find out that it very much works?  I think that’s how chocolate chip cookies were developed. At least I think that’s the lure. That’s pretty much how I came up with this recipe, and the story goes like this.

A few weeks ago, I went to brunch at my friend’s house, and I made a mint simple syrup to go on the berry fruit salad because I found in my experience that it really does add something special to ordinary fruit salad (which does not have melon in it, btw).  I ended up having a bunch of the syrup leftover, just sitting in the fridge. 

Also sitting in the fridge is ever present plain Greek yogurt. I get the plain flavor because it’s ever so versatile and I use it for parfaits and smoothies and snacks and toppings. Versatile, but sometimes just a little too plain.  Ya know what I mean?

I decided to take that leftover syrup and add just a dab to my blank slate yogurt and LIKE WHOA. I’m not kidding when I tell you that it adds a bit of something. Something very good.

The other reason I really liked using this simple syrup to sweeten the yogurt is because unlike adding granulated sugar or even honey, this left the yogurt so smooth. No grit or texture just smooooth.  I’m telling you, this syrup-yogurt marriage just keeps on getting better.

Make the syrup. Chill the syrup. Use in everything.

It just goes to show you that not everything that happens into the kitchen has to be hard, or a process, or take all the time in the world. Sometimes it’s as simple as 1 + 1. Fresh mint Greek yogurt.  Breakfast with some granola, snacks, dessert- it all adds up.

Fresh Mint Greek yogurt is simply the combination of fresh mint simple syrup and any fat Greek yogurt for a simple and special treat.

Ingredients
  • For the simple syrup:
  • 1 cup water
  • 1 cup granulated sugar
  • 1 cup (1 large handful) fresh mint leaves
  • 1 cup Greek yogurt, any level of fat
Directions
  • Step 1 Make the simple syrup by adding the water, sugar, and mint leaves in a saucepan. Bring to a boil, making sure the sugar dissolves, stirring occasionally. Simmer for 1 minute.
  • Step 2 Remove from heat , add the mint leaves and let syrup steep for 30 minutes. Remove mint leaves and pour into a glass jar. Refrigerate until cool.
  • Step 3 To prepare the yogurt, mix 1 cup of yogurt with 2 tsp of the syrup. Mix well and enjoy as you wish.
