It’s about time for me to tell you about this Egyptian Ful Medames.

Why ‘about time’ you ask? Well, because I made this two weeks ago, shot it and ready to post but…life, man. Ya know?

I love my new job, but just over four months in, I can’t rev myself up to get on the computer after I finally get off of it at 7. I just CAN’T.  And therefore photos and recipes sit in my heart and mind for over a week before it makes it here. Must to better about getting these tasks done on the weekend.

Anyway, this is one of those recipes that is great for when you need to eat but don’t really know what the heck to eat.  It’s easy, takes minimal ingredients and time, and is delicious. And healthy! What could be better!

According to Epicurious, it is truly a dish for all times. A staple in Egyptian households and life, it’s eaten as breakfast, street food, mezze in restaurants…whenever it seems one is hungry. Topped with any number of condiments, the base is a blank slate to do with what you will.

I found this version of the recipe while I was cookbook diving on my bookshelf and came from Around the World in 80 Dishes. I took my own shortcuts by using already cooked and canned fava beans rather than cooking them from raw, and therefore the whole thing here is more of a warm salad rather than a stewed salad. In these times, I’m finding, kitchen tasks must be consolidated and so here we go.

I modified this recipe by using an over medium egg atop rather than a hard boiled one, and added some pizzaz of my own in the form of crushed red pepper and salty feta, and played around with the proportions. The result? Just what I didn’t know that I wanted.

Egyptian ful medames is one of the country's staple, a simple but delicious dish of fava beans and herbs.

Ingredients
  • For the salad:
  • 1 14-oz can cooked fava beans
  • 1/2 cup red onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup flat-leaf parsley
  • 1/2 lemon, juiced
  • 2 TB good olive oil
  • 1/4 cup feta cheese
  • 1/2 TB cumin powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp crushed red pepper flakes
  • To Serve:
  • 2 over-medium eggs
Directions
  • Step 1 Add all the ingredients to a large bowl, Using a fork, smash the beans until all the ingredients are well incorporated, leaving as much texture as you desire. Serve with a runny egg, as you like.
