Raspberry Elderflower Prosecco Cocktail

I’ve moved into my new house, so cheers to that! In honor of my new digs that were a year in the making, a new recipe. A new cocktail, this raspberry elderflower prosecco cocktail.

It’s been a stressful month over here- and from what I’m hearing from my family and friends I’m certainly not alone.  Here, it’s been the move and all that goes with that. Closing, inspections, movers, painters, repairs, unpacking and introducing a cat that is very resistant to change to his new digs. However, after really going nose to the grindstone this past weekend, I’m finally mostly unpacked, and my little abode is finally starting to feel like home.

And so we cheers. This recipe was inspired by a sipper that I once had at Gibson’s in Chicago, and one that I’ve wanted to recreate forever.  Unfortunately, that recipe card, once so prominently featured on my fridge is still packed…somewhere.

But drinks wait for no man or woman, so I did what I thought was my best imitation, mixing it up a bit with some sweetened raspberry puree, my favorite, for a little nod to the spring and summer to come. It was also an excuse to use up the large bottle of St. Germaine that I’ve dragged from home to home over the past year (and if you need some more inspo for the large bottle in your kitchen, might I suggest this lovely cake?). Glasses filled to the brim with bubbles (who doesn’t love bubbles?), it’s easy, breezy and delicious.

While perfect for more formal occasions this spring (Easter, Mother’s Day), there’s no shame in using it to cheers life’s smaller occasions.

This raspberry elderflower Prosecco cocktail combines fresh raspberry puree, flowery St. Germain and bubbles for a perfect drink to cheers!

This raspberry elderflower Prosecco cocktail combines fresh raspberry puree, flowery St. Germain and bubbles for a perfect drink to cheers!

Ingredients
  • 1/2 cup frozen raspberries
  • 2 TB sugar
  • 6 ounces elderflower liquor
  • 1 bottle Prosecco, chilled
Directions
  • Step 1 In a blender, combine the raspberries and sugar and puree until smooth. Divide the puree into four champagne glasses- about 2 TB per glass.
  • Step 2 To each glass, top raspberries with 1 1/2 ounces elderflower liquor. Finally fill each glass to the top with Prosecco.
  • Step 3 That’s it! Cheers!
