Avocado Toast with Furikake

Yes, I’m giving you a recipe for avocado toast. But this is a recipe for avocado toast with furikake. Big difference.

I first fell in love with furikake in Hawaii last fall. I got something akin to these dynamite tots and wondered where it had been all my life. I stowed away a few jars to bring home and am trying to figure out how to incorporate it into my every day.  

Oh, by the way, you can get it at World Market. No need to go to Hawaii.

Anyway, eggs were the obvious answer.

Avocado toast perhaps even more obvious. I am a (late) millennial, after all.

I learned recently how to make a perfect soft scramble and so to make them even more perfect, I added a splash of sake.

So to make this iteration of the millennial brunch favorite, take those perfectly soft scrambled eggs, place atop your perfectly squashed avocado and sprinkle generously with the furikake. 

Sake bomb? Try umami bomb.

Anyway, I really liked this way to really jazz up your avocado toast routine. I tend to get into ruts of runny egg + smoked salmon, over and over again.  Boring toast, begone!

Avocado toast with furikake is flavorful twist on a favorite brunch dish with perfectly soft scramble eggs and loads of umami.

Ingredients
  • 2 TB unsalted butter
  • 4 large eggs, beaten
  • 2 TB sake
  • 4 slices bread, your choice
  • 1 whole ripe avocado
  • 1 TB furikake seasoning
Directions
  • Step 1 Spread 1 TB butter on one side of each slice of bread. Place under the broiler and cook until desired color of brown.
  • Step 2 While the bread is toasting, soft scramble the eggs by placing the remaining 1 TB butter to a small saucepan on low heat. Add the eggs and sake and cook low and slow, stirring occasionally with a whisk until curds form.
  • Step 3 Once the toast is out of the oven, smash 1/4 an avocado on each slice. Divide the eggs evenly between the bread slices and sprinkle each with furikake seasoning. Serve immediately.
