It’s Super Bowl week, ya’ll! Let’s get after it with these baked chimichurri chicken wings.
I’m going to be straight with you in that I almost straight up ignored the Super Bowl. Since the Bills lost their chance, I wasn’t even going to have people over. However, since my little Getaway was unexpectedly canceled this past weekend, I found myself with Time, Time, Time on Saturday afternoon when I got home and figured…why not. So we’ve got these wings, and there are no regrets about them.
I do love chicken wings…I’m from Buffalo after all. And while I love the OG (with blue cheese only, thanks), I also love to mix them up much like BWW. We’ve got Korean-inspired, Jamaican-inspired, Thai-inspired and Full-flavor inspired. Let’s throw herby onto that pile with these.
These I guess are technically Argentinian-inspired since that’s from where chimichurri sauce hails but I really saw it as an opportunity to use up those less-than-fresh herbs sitting in my fridge. However you look at them…you should definitely look at them.
The marinade comes together in less than five minutes in the blender. Let them sit in the fridge overnight and then they’re done in less than 1 hour one they get in the oven.
With plenty of time to relax before kickoff.
Baked Chimichurri Chicken Wings
Baked chimichurri chicken wings are easy herb marinated chicken wings, set to steep overnight before baked, not fried, the next day - done in less than 10 minutes active prep.
Ingredients
- 1 dozen chicken wings
- 1 shallot
- 1 jalapeno, seeded
- 4 cloves garlic
- 1 lime juiced
- 1 tsp salt
- 1/2 cup fresh cilantro
- 1/4 cup fresh parsley
- 2 TB dried oregano
- 1/2 cup extra virgin olive oil
Directions
- Step 1 Add all the ingredients of the marinade to a blender and puree until smooth.
- Step 2 Place the chicken wings into a bowl and pour the marinade over them. Cover thoroughly and refrigerate at least 3 hours, up to overnight.
- Step 3 Preheat the oven to 375F.
- Step 4 Place the wings in a single layer on a foil lined cookie sheet. Bake 40-50 minutes until wings are cooked thoroughly. Serve hot.
