Easy Breakfast Quiche

I can’t believe that in over ten years of blabbering on that I haven’t blabbered on about this easy breakfast quiche yet.  I think it’s just one of those things that I’ve always taken for granted that it would always be there- but then you should also feel the same way about it!

Back in the day, I woke up to a hot breakfast from Mom most mornings. I was a lucky one – we didn’t eat just cereal or pop tarts very often.  She rotated through pancakes and waffles, crepes and French toast, these croissant breakfast wraps and this quiche.

I do love quiche because it’s another choose your own adventure food! Pick your toppings and fillings and even your crust and if you ate this every day of the week, you could make it completely different each day.

This recipe is Mom’s. It’s not full of fancy cheeses or rare meats or special sauces that I tend to like to throw in my quiches, and instead gives off pure American breakfast vibes. No pretention here. And only six ingredients.

You can of course make your own pie crust but that is one shortcut Mom gives herself. If you are so inclined, I look to Joy. You can always DIY sausage as well if you prefer, but I’m staying pure to Mom’s recipe in this iteration.

Note: Don’t use the pre-shredded cheese since it has some kind of coating on it that makes it melt weird. Get the blocks and use some elbow grease and shred it yourself.

Easy breakfast quiche is a great weekday breakfast with sausage, two cheese and eggs in a flaky crust.

Ingredients
  • 1 pre-made pie crust
  • 2 TB all-purpose flour
  • 4 eggs
  • 1 ½ cup milk
  • ½ tsp salt
  • 1 tsp coarse ground pepper
  • ½ cup cheddar cheese, shredded
  • ½ cup mozzarella cheese, shredded
  • ½ pound breakfast sausage
Directions
  • Step 1 Preheat the oven to 375F.
  • Step 2 To a medium skillet, add the breakfast sausage and cook until all pink color has disappeared, using a wooden spoon to break it up into small chunks. Set aside.
  • Step 3 In a medium bowl, add the eggs. Beat well. Add the flour, milk, mozzarella cheese, salt and pepper and mix the whole thing thoroughly.
  • Step 4 Unroll the pie crust and turn out into a pie plate. Poke holes all over the crust (bottom and sides) using a fork. Add the sausage to the bottom of the pie shell. Pour the milk mixture over that, and sprinkle the cheddar cheese on top of that completely.
  • Step 5 Bake 45-50 minutes until the center of the quiche no longer jiggles.
  • Step 6 Remove from the oven and let set 15 minutes. Serve warm, room temperature or even cold!
