Happy 4th of July! I hope you are all grilling up a storm. And if you need another side dish for your shindig, I’ve got you covered. But…what the heck is San Fransokyo-style Street Corn?
Since we’re getting into corn season (knee high by the 4th of July, right?) I’m giving you a deeeelicious option for how to use those golden ears, Disney-style.
We love elote around these parts (if you haven’t had this dip yet– what are you waiting for?) and this is a Japanese twist on that.
What is San Fransokyo?
According to Undercover Tourist, the best way to describe San Fransokyo is the fictional East-meets-West city in the way that can only happen in the Disney-verse. The specific area of California Disney boasts cuisine that best described as an Asian/American/Mexican fusion with a California flair. It’s a fan favourite, so I figured there was no reason those of us that don’t regularly visit the Western House of Mouse regularly can’t enjoy it as well.
What do I need to make Japanese-style street corn?
- Fresh corn
- Kewpie mayo
- Greek yogurt
- Furikake seasoning: a mix of Katsuo Fumi and Nori Komi
- Queso fresco or grated Parmesan (though the Parm may make it a little salty)
- Green onions, finely chopped, for some greenery
This takes no time at all to come together. You can boil or grill the corn, either way works, and you just slather the rest of the mixture on the ears afterwards. It can’t be any easier, and it gives you more time to play since no one wants to spend a holiday slaving in the kitchen.

San Fransokyo-style Street Corn
Ingredients
- 4 ears corn cooked as you like
For the topping
- ¼ cup kewpie mayo
- ¼ cup Greek yogurt
- ½ cup finely crumbled queso fresco
- 3 TB nori komi furikake
- 1 TB katsuo fumi furikake
- 2 TB green onions, very finely chopped
Instructions
- Mix together the mayonnaise and yogurt. Set aside.
- Cut the ears of corn in half.
- Mix together the cheese, furikake and green onions, and set in a shallow bowl.
- Spread each ear with the mayo-yogurt mixture. Roll into the furikake seasoning and serve immediately.
