San Fransokyo-style Street Corn

San Fransokyo-style Street Corn is east-meets-west fusion that is best described as an Asian/American/Mexican fusion- with Kewpie mayo, nori and queso fresco.

Ingredients
  

  • 4 ears corn cooked as you like

For the topping

  • ¼ cup kewpie mayo
  • ¼ cup Greek yogurt
  • ½ cup finely crumbled queso fresco
  • 3 TB nori komi furikake
  • 1 TB katsuo fumi furikake
  • 2 TB green onions, very finely chopped

Instructions
 

  • Mix together the mayonnaise and yogurt. Set aside.
  • Cut the ears of corn in half.
  • Mix together the cheese, furikake and green onions, and set in a shallow bowl.
  • Spread each ear with the mayo-yogurt mixture. Roll into the furikake seasoning and serve immediately.
