Starting the year right with how we can start our day right – with this elevated Roasted Tomato Sausage Breakfast Sandwich.

I’ll admit that the second half of the year totally got away from me. I lost inspiration in the kitchen and just felt all kinds of rushing around, so I’m even more committed to taking it a little easy as we roll into the new year.

The inspiration for this recipe, and the next few that are coming along, are Ann Arbor’s local restaurants. It dawned on me when I was out the other day that eating out – it’s not necessarily that I can’t make these dishes at home – it’s more that they take the dishes that I would make at home, and add a little bit of flair to make them just a little better.

This breakfast sandwich is case and point.  What’s in a breakfast sandwich?  Some kind of meat, egg and cheese, often filling an English muffin or croissant.  It’s not much more complicated than that, right?

But what if we elevated the basics?  That’s exactly what I saw on one menu recently with the addition of roasted tomatoes.  

I LOVE ROASTED TOMATOES. They are truly my favorite way to tomato!

I was originally going to leave it there, but I couldn’t find ground turkey at the store the other day to make the sausage, but I instead bought spicy Italian chicken sausage. What?  The end result of all my basic-to-better swaps went like this.

What do I need to make a Roasted Tomato Sausage Breakfast Sandwich?

  • English muffin, because can’t mess with the classic
  • Spicy Italian chicken sausage for the regular breakfast sausage.
  • Goat cheese for sliced American.
  • Roasted tomatoes to make it extra.
  • Mixed greens to make it…well, green.
  • Sunny-side up egg to make it breakfast.

What’s great is you can totally batch make this for easy assembly in the morning time, all week long.

Roasted Tomato Sausage Breakfast Sandwich

Roasted Tomato Sausage Breakfast Sandwich layers spicy Italian sausage, goat cheese and roasted tomatoes for an elevated way to start the day.
Cook Time 1 hour
Course Breakfast, brunch

Ingredients
  

  • 2 English muffins, toasted
  • 2 eggs, cooked as you prefer (sunny side is best!)
  • 1 link Italian chicken or pork sausage approx 1/3-1/2 pound
  • 2 TB crumbled goat cheese
  • ½ cup cherry or grape.tomatoes
  • sprinkle black pepper
  • ½ TB olive oil
  • ¼ cup arugula or mixed greens

Instructions
 

  • Preheat the oven or toaster oven to 375F. In a small oven safe dish, add the tomatoes, pepper and oil. Toss thoroughly to coat. Roast for 45 min- 1 hour until soft and slightly charred. Set aside.
  • Take the casing off your sausage and shape into two patties. Flatten to the size of your English muffin.
  • To a griddle or skillet lightly coated with oil, cook your sausage patties until done all the way through, about 4 minutes per side. Set aside.
  • Just before the tomatoes are done, fry your eggs and toast your muffins.
  • Assemble your breakfast sandwich as follows: Muffin-sausage-egg-cheese-greens-tomato. Enjoy!
