Roasted Tomato Sausage Breakfast Sandwich

Roasted Tomato Sausage Breakfast Sandwich layers spicy Italian sausage, goat cheese and roasted tomatoes for an elevated way to start the day.
- 2 English muffins, toasted
- 2 eggs, cooked as you prefer (sunny side is best!)
- 1 link Italian chicken or pork sausage approx 1/3-1/2 pound
- 2 TB crumbled goat cheese
- ½ cup cherry or grape.tomatoes
- sprinkle black pepper
- ½ TB olive oil
- ¼ cup arugula or mixed greens
Preheat the oven or toaster oven to 375F. In a small oven safe dish, add the tomatoes, pepper and oil. Toss thoroughly to coat. Roast for 45 min- 1 hour until soft and slightly charred. Set aside.
Take the casing off your sausage and shape into two patties. Flatten to the size of your English muffin.
To a griddle or skillet lightly coated with oil, cook your sausage patties until done all the way through, about 4 minutes per side. Set aside.
Just before the tomatoes are done, fry your eggs and toast your muffins.
Assemble your breakfast sandwich as follows: Muffin-sausage-egg-cheese-greens-tomato. Enjoy!
