Happy Valentine’s Day! Let’s have some waffles! Norwegian waffles, to be specific.

Do you think I’d come back from Norway without sharing a recipe or two?

Valentine’s Day just happens to also be my half birthday. I also happen to love breakfast. And waffles. And cardamom. It’s like this recipe and I are MFEO.

It also happens to tie in nicely with my recent Norwegian travels, which TBH seem like a lifetime ago. The last month has been surreal, but [not] nice, and it’s been a relief to look back on that trip as a distraction. 

Anyway- these waffles.  I’m not one to make waffles all that often because I’m lazy and they kind of take a while. But today is a special day, and this is a special waffle.

What makes them special? Well, unlike my favorite Belgian waffles, they don’t use yeast. Unlike traditional American-style Belgian waffles, they don’t use egg white leavening. Actually, the batter speaks more to a pancake batter, but richer. Sour cream adds heaviness, while a touch of cardamom adds coziness.

Did I mention how much I love cardamom?

Anyhoo, these waffles, recipe borrowed from True North Kitchen, tweaked just a wee bit, are even more perfect for a Valentine’s Day treat since they are typically made with a heart shaped waffle iron. I just happen to have a mini-heart iron myself.

Who knew it would come in so handy?

What I don’t have is brown cheese, an only in Norway thing that is often an accompaniment for these waffles.  Also okay are whipped cream, jam and skyr – so I’ll stick with those. But you do you. As you wish.

But you may like them…just as they are.

So what do I need to make Norwegian waffles?

  • All-purpose flour
  • Sugar
  • Eggs
  • Butter, melted
  • Baking powder
  • Cardamom
  • Milk
  • Vanilla
  • Whipped cream, sour cream or skyr yogurt to top

Well done, Norway. I’ll have what they’re having.

Norwegian waffles are unlike their American counterparts- thin, crispy on the outside, and soft on the inside. Often served as a sweet snack with sour cream and jam, or sprinkled with sugar on top or more traditionally with Norwegian brown cheese.

Equipment

  • waffle iron

Ingredients
  

  • ½ cup all-purpose flour
  • 1 TB sugar
  • 1 tsp cardamom powder
  • ½ tsp baking powder
  • ¼ cup sour cream
  • pinch salt
  • 2 eggs, large
  • 3 TB milk
  • 2 TB butter, melted
  • ¼ tsp vanilla extract
  • whipped cream, yogurt or jam to serve

Instructions
 

  • Preheat the waffle iron in accordance with manufacturer instructions
  • To a large bowl, add the wet ingredients. Whisk the eggs and add sour cream, milk, vanilla and melted butter. Mix well until combined.
  • Whisk together the dry ingredients- flour, sugar, baking powder, salt - in a separate bowl. Set aside
  • Add the dry ingredients to the wet ingredients and mix until combined. It may not be perfectly smooth.
  • Cook waffles one at a time until golden brown and crisp. Serve immediately and top with whipped cream, yogurt or jam, as you like.
