Norwegian Waffles

Norwegian waffles are unlike their American counterparts- thin, crispy on the outside, and soft on the inside. Often served as a sweet snack with sour cream and jam, or sprinkled with sugar on top or more traditionally with Norwegian brown cheese.

- ½ cup all-purpose flour
- 1 TB sugar
- 1 tsp cardamom powder
- ½ tsp baking powder
- ¼ cup sour cream
- pinch salt
- 2 eggs, large
- 3 TB milk
- 2 TB butter, melted
- ¼ tsp vanilla extract
- whipped cream, yogurt or jam to serve
Preheat the waffle iron in accordance with manufacturer instructions
To a large bowl, add the wet ingredients. Whisk the eggs and add sour cream, milk, vanilla and melted butter. Mix well until combined. Whisk together the dry ingredients- flour, sugar, baking powder, salt - in a separate bowl. Set aside
Add the dry ingredients to the wet ingredients and mix until combined. It may not be perfectly smooth.
Cook waffles one at a time until golden brown and crisp. Serve immediately and top with whipped cream, yogurt or jam, as you like.
