Norwegian Waffles

Norwegian waffles are unlike their American counterparts- thin, crispy on the outside, and soft on the inside. Often served as a sweet snack with sour cream and jam, or sprinkled with sugar on top or more traditionally with Norwegian brown cheese.

  • waffle iron

Ingredients
  

  • ½ cup all-purpose flour
  • 1 TB sugar
  • 1 tsp cardamom powder
  • ½ tsp baking powder
  • ¼ cup sour cream
  • pinch salt
  • 2 eggs, large
  • 3 TB milk
  • 2 TB butter, melted
  • ¼ tsp vanilla extract
  • whipped cream, yogurt or jam to serve

Instructions
 

  • Preheat the waffle iron in accordance with manufacturer instructions
  • To a large bowl, add the wet ingredients. Whisk the eggs and add sour cream, milk, vanilla and melted butter. Mix well until combined.
  • Whisk together the dry ingredients- flour, sugar, baking powder, salt - in a separate bowl. Set aside
  • Add the dry ingredients to the wet ingredients and mix until combined. It may not be perfectly smooth.
  • Cook waffles one at a time until golden brown and crisp. Serve immediately and top with whipped cream, yogurt or jam, as you like.
