Chicken Satay with Peanut Sauce

We’ve got one weekend before the holidays are over. It all went by so quickly! And while I’m making the most of these last few days by re-watching The Christmas Prince and The Princess Switch more than a few times, it also means that there is only one weekend left to holiday party, host or attend, so let’s make the most of it, I say. If you’re attending one, the best hostess gifts are handmade, and might I suggest some of my most favorite snack mix EVER? Or you can choose from my favorite holiday cookies! And if you’re hosting, here’s a quickie but goodie recipe that will please all of your guests, even if they didn’t bring you a hostess gift.  I’m talking about this chicken satay with peanut sauce.

I mean, who doesn’t love meat on a stick?

The best kind of party appetizers, IMO, are the ones that guests can pop into their mouths while passing by the table, without dirtying plates or hands, or having to put down a cocktail glass once.  Because how annoying is to to balance a plate, a knife, a fork and a wine glass?  Unless you have those wine glass holding plates.

But I don’t, so onward we satay.

These are quite easy to make, on the grill in the summer, on the broiler in the winter. Marinate overnight, with pork or chicken breast or thighs. So what I’m saying is that these are as perfect for a cocktail party as they are for a summer barbecue. So, save this one for later, k?

The sauce is also delish and I secretly want to just eat it with a spoon. I’ve exercised some self control but I do think this would also make a most excellent salad dressing. Maybe for a Chinese chicken salad? Hmm, I’m saving that one for later…

Chicken Satay with Peanut Sauce

Easy chicken satay with peanut sauce combines spicy marinated chicken and a smooth, creamy sauce for a fan favorite appetizer.

Ingredients
  • For the chicken:
  • 1 1/2 pounds chicken breast or thigh, cut into strips
  • 2 onion
  • 2 cloves garlic
  • 2 TB soy sauce
  • 1 tsp coriander
  • 1 tsp lemongrass
  • 1 tsp chili paste
  • 2 TB water
  • 1 lime, juiced
  • For the peanut sauce:
  • 1 1/3 cup peanut butter
  • 2 cloves garlic
  • 4 shallots
  • 1/2 tsp chili powder
  • 1 TB brown sugar
  • 1 TB soy sauce
  • 1 lime, juiced
  • 8 wooden skewers
Directions
  • Step 1 Make the marinade by placing the onion, garlic, soy, coriander, lemongrass, chili paste, water and lime in a blender. Puree!
  • Step 2 Place the chicken in a bowl and pour the marinade in. Let sit in the fridge for at least 4 hours or overnight.
  • Step 3 Meanwhile, soak the skewers in water (to prevent them from burning).
  • Step 4 While the chicken marinates, make the sauce by placing all the ingredients in the blender until smooth. Set aside.
  • Step 5 Preheat the broiler to high.
  • Step 6 Thread the chicken evenly on the skewers. Cook on high 3 minutes, flip, and repeat another 3 minutes until the chicken is cooked through. Serve with the peanut sauce.
