Fluffy Buttermilk Biscuits

Breakfast from Mom today, which means that this recipe for fluffy buttermilk biscuits is extra special.

Extra special because I didn’t have to make them.

Extra special because of the wee bit of crispy pork belly folded in.

Extra-extra special because of the hot kimchi honey that I drizzled allllll over them.

Weekday breakfast for me is a standard affair: thick-cut oats, whey protein, sliced bananas, hemp seeds and a healthy drizzle of almond butter. Well-balanced, filling and too healthy for my own good some days. Summer swaps the oats for Greek yogurt but otherwise, there’s little variance.

BUT – yesterday, I woke up to the heavenly smell of something fresh from the oven and as I wandered nose-first into the kitchen, I didn’t even give those oats a second thought. On the counter were the fluffiest biscuits I had ever seen and I just had to have one.

Such indulgence! On a Wednesday!

Now, here’s the thing with biscuits. I LOVE them so much but, despite my best attempts, have never been able to successfully make them. They come out too short, too tough, too flat, not enough height, and no layers in sight. However, it seems that Mom cracked the code for fluffy buttermilk biscuits.

She took this recipe for butter swim biscuits and added her own little twist of crispy pork belly.  I upped the ante with some hot kimchi honey dripping all over the top.

Having seemed to crack the biscuit code, I can’t imagine making them any other way.  Perfect for a weekend treat of biscuits and gravy, or it seems, really any old Wednesday.

 

Fluffy Buttermilk Biscuits

Tall and fluffy buttermilk biscuits laced with crispy pork belly bake up perfectly light and tender and are finished with a drizzle of hot kimchi honey.

Ingredients
  • For the hot kimchi honey:
  • 1/4 cup kimchi brine
  • 1/2 cup warm honey
  • For the biscuits:
  • 2 1/2 cups all purpose flour
  • 2 cups buttermilk
  • 1/2 cup unsalted butter, melted
  • 4 tsp baking powder
  • 1 1/2 TB sugar
  • 2 tsp salt
  • 1 cup crispy pork belly or chopped, cooked bacon
Directions
  • Step 1 Preheat the oven to 450F.
  • Step 2 In a medium bowl, whisk together the dry ingredients – flour, baking powder, sugar, and salt.
  • Step 3 Slowly add the buttermilk and mix just until a moist dough is formed, careful to not overmix. Fold in the bacon or pork belly.
  • Step 4 Pour the melted butter into an 8×8-inch glass baking dish and spread the dough over the of melted butter. Using a spatula, make sure the dough is evenly distributed across pan until it touches the sides.
  • Step 5 Cut dough into 9 equal squares and bake 20-25 minutes until golden brown and fluffy.
  • Step 6 While the dough bakes, mix together the kimchi brine and honey, and set aside.
  • Step 7 Serve the biscuits warm drizzled with the hot honey.
