Because if you’re like I am, you look for any occasion to stay out of the kitchen on these hot summer days. And this will get you in and out in a flash.
I go for sandwiches, salads – anything that will get me in and out of the kitchen in less than twenty minutes and full enough to get me through the day. But I really do love me a good sandwich.
This sandwich, while simple, isn’t an obvious combination. On our recent trip to Paris, we had afternoon tea at Le Bristol and rather than serving the cucumber sandwiches often found at traditional tea service, they threw out this twist and Mom and I were both equally surprised and delighted, and I knew right away that this would be a staple at home. And I couldn’t wait to tell you about it.
We are the avocado toast generation, after all, so I figured you’d love it too.
I have a recipe here using ready-made tzatziki because, summer. Nothing wrong with a little semi-homemade. Homemade would obviously be just as swell.
Perfect for picnics, road trips, brunch or lunch.
And hey, it would even be a great addition to any Breakfast at Wimbledon spread. Just saying.
